How to Make Three Different Cannabis Cookies From One Dough

This year, we all need feel-good moments whenever we can find them. Cannabis cookies are one of the best ways to make everyone feel great during the holidays. They’re also one of the best gifts for smokers. With most of us stuck at home and still feeling like we’ve got more on our plates than ever, it’s the perfect year for a holiday tradition time saver.

Cannabis cookie dough ingredients

    • Heaping ½ tspn (2.5g) coarse sea salt

    • ½ tspn (2.1g) baking powder

    • 3 cps (360g) all-purpose flour

    • 10 tbsps (1 ¼ sticks or 142g) chilled cannabis butter, cut into ½” squares

    • 10 tbsps (1 ¼ sticks or 142g) chilled unsalted butter, cut into ½” squares

    • 1 cp (201g) sugar

    • 1 large egg

    • 1 large egg yolk

    • 1 tspn (4.2g) vanilla extract

Makes 2-3 dozen, depending on cookie size. If 2 dozen larger cookies, dosage per cookie is ~4mg of THC. If 3 dozen, dosage per cookie is ~3mg of THC.

Preheat the oven to 325 degrees (when baking with cannabis, always use recipes in which the heat is at 350 degrees or less) and place the oven racks in the upper and lower thirds of the oven.

In a small bowl, whisk the salt, baking powder, and flour until they’re well blended. Use an electric mixer on high to beat the butter and sugar until it’s well combined—this step is important to promote even THC distribution. Add egg, egg yolk, and vanilla, mixing just until combined. Reduce the mixer speed to low and gradually fold in the dry ingredients, mixing just until combined.

For giftably beautiful cannabis sugar cookies, take the fully mixed dough, form it into two ¾”-thick disks, then wrap them in plastic and chill them for about 2 hours. Cannabis butter is more like the consistency of ghee (clarified butter), so it hardens faster than plain butter. Leave each disk of dough in the fridge until you’re ready to roll it out.

When you’re ready, take the dough out of the fridge and let it rest at room temperature until slightly softened. Lightly flour a sheet of parchment paper on a flat surface and roll out the dough until it’s about ¼” thick. If the dough gets sticky, chill it in the fridge on the parchment paper until it’s firm again. Cut out cookie shapes with floured cookie cutters or scissors and transfer the finished shapes to parchment-lined baking sheets. Repeat with scraps and the remaining dough.

Bake for 12–16 minutes until the edges of the cookies are golden-brown, rotating baking sheets halfway through. Transfer the cookies to cooling racks.

But we’re OG and prefer our cannabis sugar cookies with traditional icing.

    • 4 cps (480g) sifted powdered sugar

    • 3 tbsps (42.9g) meringue powder 

    • 1 tspn (5 ml) vanilla extract

    • 9–10 tbsps (133-148ml) room temperature water

    • Food colorings of choice (liquid or gel)

Makes about 2 cups (240g), about right for a single cannabis sugar cookie dough recipe.

To get your creative juices flowing for decorating, we suggest eating an un-iced cookie or two when they first come out of the oven. Within 30 minutes to an hour, you should be feeling more artistic.

When you’re getting ready to decorate, combine the sugar, meringue, vanilla, and 9 tbsps water in a large mixing bowl. Use an electric mixer (preferably with a whisk attachment) on high and beat the ingredients for about 2 minutes. When you lift up the whisk/beaters, any icing that drips off should smooth out in the bowl in 5-10 seconds. If it takes longer, add a little more water. If it smooths out too quickly, add a little more sugar. Once you have the right consistency, divide the icing into smaller bowls and stir in food coloring until you achieve your desired color palette.

Snickerdoodle edibles are similar to cannabis sugar cookies, but tons easier. If you don’t want to put in all the effort of rolling and decorating, but still want the yummy fun, this is your cannabis cookie recipe.

⅓ cp (70g) sugar

1 tspn (4.2g) ground cinnamon

In a small bowl, combine sugar and cinnamon until well blended.

Make the cannabis cookie dough recipe above. As soon as you’ve finished fully mixing the dough, roll it into small balls—about 1 ½ tbsps each. Then roll each dough ball in the topping mix until fully covered. Sprinkle a little extra on the top of each and arrange on parchment-lined baking sheets about 3 inches apart.

 

Bake for only 10 minutes (still at 325 degrees)—we’re undercooking these cookies so they stay nice and chewy. While still warm, press down on the center of each cookies with the back of a spoon to slightly flatten it. Let the cookies cool and then melt in your mouth!

Make the cannabis cookie dough recipe above. As soon as you’ve finished fully mixing the dough, roll it into 24 balls—about 2 tbsps each. No refrigeration of the dough is required with this recipe. Place the cookie dough balls about 3 inches apart on parchment-lined baking sheets. Press down on the center of each dough ball with the back of a spoon to flatten it into a round before placing them in the oven.

 

Bake 12-16 minutes or until the edges are light golden brown. As soon as you take the them out of the oven, gently push 1 turtle candy into the top of each warm cookie. Sprinkle each cookie with a little sea salt and cool for about 3 minutes. Remove from baking sheets to racks and cool completely—about 30 minutes. Or immediately sample the gooey goods. We know we do!

 

As always with edibles, start low and go slow. It can take between 30 minutes and up to 4 hours for edibles to fully take effect. As delicious as all 3 of these cookies are, take your time eating them for maximum holiday enjoyment.
